Peanut Sauce

THAI CASHEW CHICKEN

3-4 boneless skinless chicken breasts
Asia-Asia Peanut Sauce
1 cup roasted cashews
1 red pepper and 1 green pepper cut into bit size pieces
2 stalks green onions (slivered)

Cook unseasoned chicken breast until done. Can be grilled, baked, or broiled, then cut into 1" cubes. Place the chicken cubes into a bowl, add peanut sauce and mix well until each piece of chicken is coated. Microwave the pepper pieces until slightly softened, add to the chicken. Just before serving, heat entire dish in microwave and garnish with roasted cashews and green onion slivers. Serve over white rice.

* Use as a dip with your favorite egg rolls or dumplings.
* Use as a dip for chicken nuggets.
* Pour over noodles for a great healthy side or main dish.
